Colorful carrot salad with carrot green pistachio pesto


  • Colorful carrots (approx. 3-4 per person) with green on them
  • some basil or wild garlic
  • lemon
  • firm goat or sheep cheese (e.g. Pecorino)
  • olive oil
  • Salt pepper
  • Shelled pine nuts


    1. Cut the greens off of 2 carrots and wash them
    2. Mix with cheese , basil, pine nuts, salt and olive oil to make a pesto
    3. Peel the carrots and slice them into thin slices using a vegetable peeler
    4. Drizzle with a little lemon
    5. Serve with some crumbled cheese and pesto
    6. Voila!
