Ingredients:

Colorful carrots (approx. 3-4 per person) with green on them

some basil or wild garlic
-
lemon
-
firm goat or sheep cheese (e.g. Pecorino)

olive oil
-
Salt pepper
- Shelled pine nuts
Steps:
- Cut the greens off of 2 carrots and wash them
- Mix with cheese , basil, pine nuts, salt and olive oil to make a pesto
- Peel the carrots and slice them into thin slices using a vegetable peeler
- Drizzle with a little lemon
- Serve with some crumbled cheese and pesto
- Voila!
