Ingredients:
for two:- a small head of red radicchio
- a small head of radicchio rosso (the pink one)
- a blood orange, grapefruit and kumquats
- a handful of hazelnuts
- a few leaves of sage
for the dressing:
- 2 tablespoons blueberries (frozen also works)
- Olive oil (approx. 5 tbsp)
- Honey mustard (1 tbsp)
- some white wine vinegar (approx. 2 tbsp)/or
- collected orange/grapefruit juice
- Salt pepper
Steps:
- Wash salads and cut into strips or
pluck - Peel the citrus fruits with a knife and cut the fillets
trigger - Collect the juice that comes out and use it
set the dressing aside. - Cut kumquats into thin strips.
- Roast the hazelnuts in a hot pan until they start to form
to smell - Crisp sage leaves in a little olive oil
bake out - For the dressing, put all the ingredients in the blender
puree until smooth and creamy - Mix all ingredients together and add
Serve blueberry dressing. Voila!
