Red Bowl


for two:
  • a small head of red radicchio
  • a small head of radicchio rosso (the pink one)
  • a blood orange, grapefruit and kumquats
  • a handful of hazelnuts
  • a few leaves of sage

for the dressing:

  • 2 tablespoons blueberries (frozen also works)
  • Olive oil (approx. 5 tbsp)
  • Honey mustard (1 tbsp)
  • some white wine vinegar (approx. 2 tbsp)/or
  • collected orange/grapefruit juice
  • Salt pepper


    1. Wash salads and cut into strips or
    2. Peel the citrus fruits with a knife and cut the fillets
    3. Collect the juice that comes out and use it
      set the dressing aside.
    4. Cut kumquats into thin strips.
    5. Roast the hazelnuts in a hot pan until they start to form
      to smell
    6. Crisp sage leaves in a little olive oil
      bake out
    7. For the dressing, put all the ingredients in the blender
      puree until smooth and creamy
    8. Mix all ingredients together and add
      Serve blueberry dressing. Voila!
